Mother's Day Cake


Gluten Free Cake:
3/4 Cup Rice Bran Flour
1 Cup White Rice Flour
1/3 Cup Sweet Rice Flour
1/3 Cup Coconut Flour
1/3 Cup White Corn Flour
1/4 Cup Potato Flour
1/4 Cup Millet Flour
2 Teaspoons Xanthan Gum
1 Tablespoon plus 1 Teaspoon Baking Powder
1/2 Teaspoon Salt
Combine these ingredients together and mix well.
In mixing bowl cream 1 cup of softened butter and 2 Cups of sugar until light and fluffy.
Add 3 eggs, one at a time, beating after each egg.
Add 1 1/2 Teaspoons of flavoring (your choice) I used orange with 1 Tabl. of grated orange peel.
Add the flour mixture alternately with 2 1/2 cups of buttermilk and mix until everything is blended.
Pour this mixture into greased and floured 9" cake pans.
Cook 350 degrees for 30-35 minutes or until toothpick inserted in center comes out clean.
Cool on rack.

Gluten Free Cookie Drops

Chocolate Coconut Cookies
1 stick butter or margarine
2 c. sugar
1/2 c. cocoa
1/2 c. milk
3 c. quinoa flakes
1/2 tsp. gluten free pure vanilla
1/2 peanut butter
1 c. organic coconut

Melt butter, add sugar, cocoa and milk and boil for 1 minute. Add vanilla, stir in peanut butter and coconut. Drop by 1/2 teaspoon on wax paper. Cool in refrigerator.
Store in air tight container.
